Couscous salad with kiwi, snack cucumber and broccoli

A couscous salad filled with kiwi, broccoli and snack cucumber! Delicious!

Ingredients

2 yellow kiwis

200 g whole grain couscous

3 roots

200 g broccoli

10 snack cucumbers

1 onion

3 sprigs of fresh parsley

3 sprigs of fresh mint

4 tbsp olive oil

2 limes

Pepper and salt

Preparation

Step 1

Add the couscous along with half a teaspoon of salt to a bowl of boiling water. Prepare the couscous according to the directions on the label, then let it cool.

Step 2

Peel and dice the carrots. Next, cut the broccoli into small bushes. Then blanch the carrots and broccoli in boiling water for 3 minutes. Drain them and then rinse them with cold water.

Step 3

Peel the yellow kiwis and onion and cut them small. Then dice or slice the snack cucumbers.

Step 4

Pick the leaves from the herbs and chop them finely. Next, mix together the olive oil, lime juice and pepper, then add all the vegetables and fruits to the bowl. Finally, add the herbs and dressing and mix well.

Step 5

Let the salad cool in the refrigerator for a few hours and serve!
