Stuffed tacos with salsa and a refreshing salad!

Ingredients

4 tomatoes

1 small chilli

5 snack cucumbers

1 spring onion

1 tbsp lemon juice

1 onion

1 clove of garlic

1 red bell bell pepper

1 can of kidney beans

1 tbsp oil

Paprika

Chili powder

4 taco shells

4 tbsp semi-skimmed yogurt

40 g aged 30+ cheese

Preparation

Step 1

Wash, skin and dice the tomatoes

Step 2

Wash the chili pepper, cut it up and remove the seeds. Then chop them finely.

Step 3

Wash and grate the snack cucumbers.

Step 4

Wash the spring onion and cut it into rings.

Step 5

Make the spicy salsa by combining the tomato, snack cucumbers, pepper, spring onions and lemon juice.

Step 6

Preheat the oven to 175°C.

Step 7

Peel the onion and garlic and chop them small.

Step 8

Wash the bell bell pepper, clean it, dice it and fry it in the oil.

Step 9

Drain and then rinse the kidney beans.

Step 10

Add the kidney beans along with the bell bell pepper, paprika, paprika, chili powder and 50 ml to the onion and garlic. Let this braise gently for 5 minutes.

Step 11

Hang the taco shells on the oven rack and let them get hot for 5 minutes.

Step 12

Fill the taco shells with the bean mixture and spread the yogurt with the cheese on top. Serve the salsa with it.
