Panzanella salad with snack cucumbers and tomatoes

Ingredients

1 primal bread or old bread you have left over

250 gr cherry tomatoes

5 snack cucumbers

1 red bell bell pepper

1 ball of buffalo mozzarella

Handful of fresh basil leaves

1 red onion

Grated Parmesan cheese

50 ml of olive oil

1 tbsp white wine vinegar

1 clove of pressed garlic

Pepper and salt to taste

Preparation

Step 1

Put a generous splash of olive oil in the pan and briefly fry the pressed garlic in it. Note! The garlic should not be discolored.

Step 2

Cut the primal or ancient bread into pieces, add it to the garlic and fry over medium-high heat until the bread turns crisp and golden brown.

Step 3

Cut the snack cucumbers into slices, the bell bell pepper into pieces, the onion into rings and halve the tomatoes.

Step 4

Spoon the bread with the vegetables into a large bowl and break the buffalo mozzarella into pieces over the salad.

Step 5

Finish the salad with the basil leaves, grated Parmesan and a tablespoon of white wine vinegar. Finally, add black pepper and a pinch of salt to the salad and enjoy!
